Walnut Roll
Ingredients (for 28x28cm baking tray):
Egg: 3
Brown sugar (yolk): 20g
Brown sugar (white): 30g
Cake flour: 40g
Unsalted butter (melted): 10g
Milk: 25g
Chopped walnut: some
Heavy Cream: 150g
Granulated sugar: 15g
To make the walnut roll:
1. Separate egg white and egg yolk.
2. Add brown sugar into egg white ⅓ a time. Whisk until soft peak form.
3. Add brown sugar into egg yolk, whisk until combine. Add melted butter and milk and mix well. Add sifted flour and whisk until fully incorporated.
4. Pour ⅓ egg white into egg yolk mixture, mix well using a spatula.
5. Pour the mixture in step 4 into egg white. Mix carefully using a spatula until fully combined.
6. Pour the mixture into the baking tray lined with parchment paper. Smooth the top and add in chopped walnuts.
7. Bake in preheated oven at 180C for 15 min.
8. Remove the the cake from oven. Immediately peel off the parchment paper and leave until cool.
9. Beat heavy cream with granulated sugar until soft peak form. Add some chopped walnut and mix well.
10. Flip the walnut cake. The side with walnut facing downward. Put the heavy cream in step 9 on the cake. Leave 3-4 cm on one side. Carefully roll up the cake from the opposite side. Cover the cake roll with parchment paper. Put into fridge to set for at least 30 min.
11. Cut into pieces and serve.
