Strawberry panna cotta

Original Recipe

Ingredients:

Panna cotta:

unflavored Gelatin: 1 Tbsp

Water: 2 Tbsp

Half and Half: 1 cup

Heavy Cream: 1/2 cup

Vanilla Extract: 1 tsp

Lemon peel: 1/2 tsp

Granulated Sugar: 2 Tbsp

Strawberry Sauce:

Strawberries (fresh or frozen): 1 cup

Sugar: 1 Tbsp or more

Fresh Lemon Juice: 1 tsp

1/2 tsp Cornstarch mixed with 1 Tbsp of Water

To make the panna cotta:

1. Place the water in a small bowl and sprinkle over the gelatin, set aside to soften.

2. In a small saucepan, add the heavy cream, half and half, lemon zest and sugar, bring to a simmer over medium heat. Turn the heat off and add the gelatin mixture, whisk until combine.

3. Strain the mixture and add the vanilla extract.

4. Pour the mixture into pudding cups r other containers. Cover and refrigerate 4 hours or overnight.

To make the strawberry sauce:

1. Place the strawberries, sugar and lemon juice in a blender and puree it. Strain it through a fine sieve and place the puree in a small saucepan.

2. Bring the puree to a simmer and add the cornstarch mixture and cook stirring constantly until the mixture thickens. Remove from the heat and pour it in a small container and let it cool completely.

Assemble:

1. Pour the strawberry sauce over the panna cotta.

2. Garnish with your choice of fruit and serve.
